EASY BRUNCH RECIPES

Today, as promised, I am sharing two recipes that are perfect for a brunch or breakfast. The first recipe is a breakfast casserole, and the second recipe is a fruit salad.  Actually, the fruit salad would be perfect with any meal.

Breakfast Casserole

Ingredients:

8 Eggs slightly beaten

1 tsp. dry mustard

½ tsp. salt

2 cups milk

6-8 slices of bread cubed

1 heaping cup of shredded sharp cheddar cheese

1 lb of precooked diced ham steaks or 1 lb of browned and crumbled sausage *I made my casserole with the precooked ham steaks.*

Directions: Mix and pour the ingredients into a greased 8”x 11” baking dish. Refrigerate for 8 to 12 hours. Bake at 350 degrees for approximately 45 minutes.

Fruit Salad

Ingredients:

2 15.25 ounce cans of sliced peaches in heavy syrup

1 20 ounce can of diced pineapple chunks with its juice

3.4 ounce package of vanilla pudding mix

2 cups of seedless grapes (green or red)

2 quarts of strawberries sliced

3 sliced bananas

Directions:  Pour the two cans of peaches with its juices and the can of pineapple with its juice into a large bowl.  Stir in the pudding mix.  Then add the other fruit except for the bananas and stir until well mixed.  Refrigerate at least 3 hours and add bananas before serving.  I like to make this the night before and put the bananas in before serving to keep them from getting brown.
